Midnight Sunbathing is our first pastry stout at Westbrew. We started this beer by doing a double mash no sparge lauter. That means we mashed in two times to collect our volume in our kettle before we started the boil. Pastry stouts are rich in flavor, very thick, with a long rigorous boil to create a caramelization blend of the malts. With an 8-hour boil, we condensed our wort to become very rich and viscous. This beer has huge notes of dark chocolate, rich caramel, mocha spice, and a touch of cinnamon to round out. From the very first sip, midnight sunbathing lingers on the pallet leaving you thirsty for more.
