Bourbon Street Baltic Porter is a porter that is aged in Pappy Van Winkle Bourbon barrels. It is brewed with a combination of pale, caramel, and roasted malts. It is fermented at cooler temperatures to accentuate the flavors of the malt. The caramel and roasted malts give the beer its dark color and sweet roasted flavor. After fermentation the beer is cold aged for 4 weeks. This is typical of the style and allows the flavors of the malt and hops to balance and produce a very smooth flavor. After it is cold aged the beer is transferred into the bourbon barrels, then aged for another 8 weeks to absorb all of the flavors from the barrels. The result is a robust porter that brings out the sweet and roasted flavors from the malt and the warming bourbon flavors from the barrels.

This is a version of our Pecan Harvest Ale that we have aged in a different manner and cask conditioned. The beer is produced in the brewhouse and fermented in the same manner as Pecan Harvest Ale. After fermentation we will age the beer in 3 different types of toasted American Oak (light, medium, and heavy toasted) and Bourbon barrels. Each different wood barrel will impart different flavors and aromas to the beer. After aging for 8-12 weeks the barrels will be blended together and cask conditioned. The result is brown ale with a warm bouquet of flavors of roasted nuts, honey, toasted bread, toffee, vanilla, and bourbon.

Oats are also added to give the beer a fuller and sweeter taste. The roasted malts give the beer its dark color as well as its intense flavor and aroma. After fermentation the beer is cold aged for 6 weeks. This is necessary for all of the flavors of the malt and hops to balance and produce a very smooth flavor. After the cold aging the beer is transferred into the bourbon barrels. It is then aged for another 8 weeks to absorb all of the flavors from the barrels. The result is a strong stout that brings out the roasted flavors from the malt and the warming toasted, vanilla, and bourbon flavors from the barrels.

Our Ancient Wet Hop Ale is named after Shem, the son of Noah in biblical history. He was a brewer who utilized the grains that were available at the time. We brewed this beer with raw and malted barley, as well as the seven ancient grains: amaranth, kamut, buckwheat, spelt, quinoa, millet and teff. These ingredients impart a raw and natural grain flavor to the beer and because most of the ancient grains are naturally light in color and unmalted, this beer is pale in color. We hopped the beer with wet Centennial hops. These are hops that are used in the brewing process right after they are picked from the vine. These hops impart a natural green hop flavor to beer, as well as the usual flavors of citrus and pine that are normally associated with Centennials. We are happy to announce that Abita Beer will be creating our first ever collaboration brew with Birrificio del Ducato. Two Boots, appropriately named for the shape of Louisiana and Italy, is a Saison brewed with peppercorn, lemon balm and honey. Birrificio del Ducato is an award-winning craft brewery located in Parma, Italy that uses natural and local ingredients. Brewmaster, Giovanni Campari, visited our brewery recently to meet with me and conduct a small initial brew. Two boots will be made with pilsner and wheat malts and hopped with German Perle hops. We used a local producer of raw honey, Blood River Honey, to give the brew a very dry finish, which is great for a Saison. The addition of the lemon, green and pink peppercorn enhances the overall flavor of the brew. The honey is added in the brewhouse at the end of the boil, and then the lemon balm and pepper is added in the aging tank. Adding the pepper to aging tank will impart the flavor and aroma without adding as much heat and spice. Finally, adding the lemon balm to the aging tank will impart the fresh flavor and aroma of the herb. In the end this is a very balanced beer with the flavors of the malted barley, wheat, hops, yeast, herbs, and honey all blending together for a refreshing brew. Two Boots will be released in very limited quantities on draft in August 2014. It will be available in 22oz bottles and as a select on draft in spring 2015.
