Released in spring our Maibock has a brightness and bitterness which foretell the blue skies of summer. This lager has a warm golden hue with a peppery hoppiness and toasty malt flavor. The Pontiac GTO is legendary in the muscle car world and often referred to as the “Goat.” Bocks got their name from the German for Billy Goat thanks to their fuller flavor than the pilsners of the day, which makes GTO the perfect appellation for our springtime lager, the fact that GOAT can also stand for the “Greatest Of All Time” is surely a lucky coincidence. We will let you decide. 6.4% ABV

We used locally grown Sonoran Wheat and Rouge de Bordeaux in the grain bill as well as a few loaves of Don’s bread for good measure. The result is a beer with a solid malt backbone to balance the mix of hops in a classic pale ale that you will only find in Tucson. Understeer is that feeling you get when you turn the wheel in your car and nothing happens. Common on ice and in front wheel drive cars. Not the sexiest of driving maneuvers, but considered safer than oversteer where the back end goes sliding around and you end up facing the wrong way in traffic. It took Porsche engineers 25 years to dial in some understeer in the 911. Like its big brother Oversteer, but lighter, dry, easy drinking. Big tropical nose, hints of pine and stone fruits. With a lower ABV, Understeer Session IPA has all the glory of our bigger beers but in a more manageable ABV, just like some dialed in understeer.

The second beer in our Prototipo series, the base of this beer uses a lot of wheat balanced by two row and light munich malts, lending both orange hues and subtle, pleasant notes of biscuit. it has relatively low perceptive bitterness but a fair amount of pine and citrus hop aroma, via cascade hops. the reason this beer has a 'prototipo' distinction is because we were experimenting with a different wheat ale yeast than we've used before - in this case, the yeast provided a fair amount of spice and phenol, which may read as clove or banana or licorice. We hope you like it as much as we do and if it sticks around, you can help us name it!

With fresh raspberries, hibiscus and lactose for balance, the Mosaic hops still shine like those beautiful cylinder heads.
