Grimm Brothers Bearskin

We have always enjoyed stouts and decided to use our freedom to create a stout for St. Patrick’s Day using German Noble hops and our house yeast. You may notice that the ester profile on this beer is very low due to house yeast being a German yeast strain prone to cleaner characteristics.

Stouts are descendant of porters with porters being brewed in London and exported to Ireland in the 1730s. When mild ale came out, porter started to lose it popularity. However, the dark beers flourished in Ireland where breweries such as Guinness, Murphy’s and Beamish started to grow in size. With the use of black patent malt the flavor become stronger and color darker bringing about what we now call Stout.
