Created as a new cider from the ground up, Seattle-based MarketSpice’s caffeine-free rooibos chai tea mix was extracted via both hot and cold processes, bringing out subtle tannins as well as characteristic spicy aromatics. The tea was then infused with cider made with an expressive, fruity yeast that lends nutty and tropical notes. The flavors melded and mellowed as they were aged four months.
