Our Mod Project Barrel-Aged Strong Ale with Plums focuses on nutty, toffee and dark fruit characteristics. Plums were added to the wood-aging barrels at 1 pound of fruit per gallon. 8 months’ conditioning in oak, mellowed the 11% ABV and imparted a hint of woody vanilla. Instead of traditional Belgian Quad yeast, we selected a fruity English yeast strain that melds well with the ripe fruit and warm wood flavors.
