American Pale Ale5.2% ABV

Brewed with barley from our farm in central Michigan, Midwestern Pale Ale stands apart from the model of completely hop-dominated pale ales, offering a noticeable degree of malt body to counter the hop bitterness. A blend of floral & herbal hop notes provide the aromatic & flavor highlights, alongside the distinctive contribution of our house ale yeast. A crisp bitterness finishes the experience without being harsh.

Food Pairing:

Midwestern Pale Ale is a great aperitif. Pair it with delicate dishes where the dry bitterness can clean up some of the fat or richness.

Also pairs well with oily fish (sturgeon, mackerel, blue fish, marlin, Wahoo and smoked versions as well), meat pies or chicken pot pies and burgers.

For dessert, try pumpkin flan, maple bread pudding or bananas foster.

Pairs well with cheeses like Jack, Brick, Brie, Derby with sage, Leicester, Camembert, Manchego, Emmenthaler or Gourmandise with walnuts.

When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. Sourcing classic Cascade from the Pacific Northwest and Australian Galaxy hops from…yes…Australia, we made a beer both lovers of frothy peaks and hoppy green buds will be stoked about. At the same time, we stayed true to our San Diego roots by pushing the hop boundaries of this style. While some might think it lingers on an edge far closer to an IPA, with all the dry-hop flavor and aroma, it’s actually right in line with the current-day interpretation of a West Coast pale. Ours just so happens to have an Aussie accent that’s cascading with a juicy amount of grapefruit and passion fruit hoppiness.
