Aged in 60 HL Foeders (French Bordeaux) for about 13 months. Proprietary house bacteria and wild yeast. No twist or tweaks, just an attempt at a classic Belgian style from a NW brewery. Nice balance of Bret and acidity on a typical Gueuze malt bill.
