Our uniquely American take on a blended Lambic. The original blend of yeast and bacteria was started about a decade ago and has been passing through our barrels and evolving ever since. This batch was aged for 11 months in French Cabernet barrels and boasts a complex acidity and a plethora of wild flavors that change with every sip.
