This sour is made with three separate inoculations over the course of 8 months: our house strain for primary, Brett C. and pedio in Cabernet barrels, and finally a blend of happy fruit-forward critters. The result is a bright, complex sour with notable acidity and characteristics of cherry, watermelon, plum and sweet tarts.
