The 2018 North Meets South base cider consists of apples from Poverty Lane Orchards in New Hampshire. The apples are “bittersweets” (high tannin, high sugar) from both England and the US: Ashmead’s Kernel, Chisel Jersey, Dabinett, Esopus Spitzenburg, Golden Russet and Yarlington Mill. A wild ferment started the process, which brings a slight smoky and woody component that plays well with the tannins from the fruit. We back-sweetened the cider with fresh Stayman apples from North Carolina. This medium sweet cider has enough acidity to provide balance, while apple, peach and pear notes add to a finish that invites another sip.
