Simcoe has been one of our favorite varieties in the single-hop experiment so we decided to bring it back for 2016. The aroma is big and earthy, like walking through a pine forest on a summer day. There is an underlying fruit character on the nose, almost like orange rind with passion fruit, but it is hard to pick up through all the pine. The flavor is bold and full of dank pine up front, but quickly subsides into a fairly mild and sweet passionfruit or guava. We do not pick up any of the trademark "cattiness" that Simcoe is famous for. The beer finished dry, with a slight bitterness that lingers, reminding you to take another sip.
