One of our nods to Mel Brooks, Old Schwaanstucker (Young Frankenstein), is technically a seasonal beer we brew for Oktoberfest. The modern day Oktoberfestbier is essentially a festival strength Helles (a lovely beer in its own right, to be sure!). For Old Schwaanstucker, I really wanted more of an "old school" Oktoberfest style beer. Writing, in German, to Weyerman Malting Co., in Bamberg, Germany, where I buy my malts for all of my German Style beers, i asked them for a recipe, which they provided, in German, of course! In brewing this beer I try to mimic the complicated step raises typical of a German beer profile. the result is a beautiful beer with a wonderfully smooth and complex malt palate. Generally available beginning mid-September until the batch is gone.
Food Pairing: Roast pork, grilled salmon, smoked sausage, gouda cheese.
