Hops are usually picked, dried, then pelletized for long term storage and use--but once a year we can get hops fresh from the farmer. This year, our Citra hops were harvested, shipped, and boiling in our kettle all in less than 24 hours. Using such fresh hops gives a beer a more subtle, fresher, multi dimensional character than a normally processed (dried and pelletized) hop.
A simple grain bill allows the hops to shine through--pilsen malt provides a light, delicate foundation; a touch of munich malt is used for a bit of full bodied, biscuity flavor; caramel 90 malt gives the beer rich coloring and a hint of caramelized sugar sweetness. Together, these malts make a simple, biscuity, very lightly sweet backbone to support the high IBUs and hop flavor of this fresh hop Citra pale ale.
