Bitto Honey was the beer that started it all. Named after a friend of the brewer, Tim Bitto, who asked for a beer to serve at a party for his brother Don who had recently finished med school and was moving to Denver to start his career and the long road to paying off student loans. The home brew was called “HIPA” for ‘Honey IPA’ and a play on the medical term. This was one of those moments every home brewer experiences where everyone at the party asked where they could buy that beer. When they learned it was home brew and they couldn’t the seed was planted for starting a brewery
