We love making sour ales from Northwest seasonal fruits or herbs. Our beers are naturally soured in the kettle, unlike our interest in the piccolo, which soured immediately while forced to play One Night in Bangkok in marching band.* We find the perfect ph for the flavor profile, then boil and finish. While our yeast may not be wild, our flavors are pretty crazy.
