The base beer for Bishop’s Barrel No. 12 is Christmas Ale, our rich, hearty ale brewed for the holiday season. We aged it in Sauvignon Blanc barrels with tart cherries and three strains of brettanomyces. BB12 was on wood longer than any of our previous Bishop’s Barrel releases - 21 months.
It pours with a very slight veil and ruby highlights. Aroma? Think toasted pie crust and cherry pie with powdered sugar followed by funky, earthy notes and subtle white grape. Taste? It starts with a light acidity that is quickly balanced with a cherry/caramel sweetness. This beer has a light-medium body and is dry yet with a long, wine like finish.
