This is our first foray into farmhouse styles and we used Pekko hops, which are named after the Finnish god of farming. This beer earned its name from the practice of allowing the fermentation temperature to free rise during fermentation. The saison yeast we used at those higher fermentation temperatures has produced a wonderfully spicy, fruity and very drinkable beer!
