Initially brewed as a classic approach to Belgian Witbier, Sanity & Wits is our barrel aged interpretation. Primary fermented in stainless steel with a highly phenolic yeast strain, six months of barrel aging with our mixed culture results in bright notes of citrus, coriander, and complex funk. All your sanity & wits, they will all vanish I promise, it’s just a matter of time!
