Saison means “season” in French and comes from a time when this style of beer was brewed in Belgian farmhouses in the French speaking Wallonia region. The beer was then later served to the seasonal workers (Saisonniers) during the summer months in the fields. The base beer is our signature Saison, La Vie en Rosé, brewed with locally sourced Organic Orange Blossom Honey, Wild Crafted Grains of Paradise from Morocco and Organic Hibiscus flowers from Burkina Faso, giving the beer its signature rose color and noticeably dry finish. La Vie en Rosé is then combined with our house Brettanomyces strain as it enters the bottle for a mixed fermentation, creating an extremely effervescent bottle-conditioned ale. The wild yeast and rustic ingredients add funky background notes to this high-brow version of a peasant workers' beverage, worthy of drinking with your “Pinky Out”.

A Flanders Red named after the Belgian town of Roeselare where the style originally developed. This style is near and dear to Winslow’s heart after living in Bordeaux reminds him of Belgian Beer bars in the area. This red features a strong cherry aroma and a complex malt background of dark aged fruits and leather over the sour lactic bite and acetic notes. The complexity of this beer is driven by the yeast. The yeast is Winslow’s proprietary blend containing multiple sachro, brett, pedio, lacto, and acetic strains, with Belgian origins. Following almost a decade of selection, and surviving a fire in the cellar below, this yeast has become its own unique blend designed specifically to work well in light bodied, fruity red wine barrels. The barrels used to age this beer are French Oak and were previously used to hold Pinot Noir in Napa Valley.

The modern pale version of the Belgian Tripel finds its roots at the Westmalle brewery in Belgium, having previously been a much darker ale. The Tripel has since become a favorite among beer lover worldwide and is often bottle conditioned. Our tripel has notes of bright citrus on the nose from the addition of Lemon Verbena picked directly from Winslow's own garden, to compliment the more traditional banana and clove Belgian background. First taste reveals flavors of pomme fruit & golden honey followed by a noticeably dry, effervescent finish.
