"The Myth and Legend of Wolf Brand Chili” by Molly Ford Coronado

“Neighbor, how long has it been since you’ve had a big thick steaming bowl of Wolf Brand Chili? Well, that’s too long!” Together we will explore the origins of Wolf Brand and its 19th-century beginnings with a talented range cook, entrepreneurs, and their “pet” wolf Kaiser Bill, all from the small town of Corsicana, Texas.

Molly is a proud third generation Corsicanan and in her later years, a Dentonite. She has a background in art history and material culture studies and currently researches urban and food histories of South Texas. When not nerding out, she helps the good people of Ravelin Bakery with their daily operations and chills with her beau, Sam, and chiweenie, Karl.

“Kombucha: The History and Science Behind America’s New Favorite Cure-All” by Tyler Cullender

Miracle elixir of life. Dirty hippie juice. Blob water from the great beyond. Kombucha goes by many names and tends to polarize the masses. Whether you enjoy the beverage or not, it’s likely to maintain its status as a mystical beverage of well-being for quite some time. During this presentation we’ll discuss the journey that kombucha traveled to reach Whole Foods superstar status as well as the burgeoning science around the kombucha health halo.

Tyler Cullender is the Director of Brewing Operations at Grapevine Craft Brewery. Over the past three years, Tyler has worked as a brewer and QA/QC scientist in the DFW brewing industry. He received his PhD in Microbiology from Cornell University in 2013, where his research focused on the gut microbiome and its interactions with the immune system of the human body.
