We blended our wine barrel-aged sour blonde ale with foeder-fermented brettanomyces farmhouse ale to craft a complex base of stone fruit, oak, and earthy funk to compliment the herbal, mango and lemon-like character of Mosaic.
Racer X® is an uncommon Double India Pale Ale which puts a California twist on English brewing traditions by adding an assertive hop aroma and bitterness that compliments the firm malt backbone. Like its little brother Racer 5, Racer X® is balance in a bottle.
Deep ruby red in color with a dense off-white foam. Toasted/roasted caramel malt introduction with nice bready characteristics. Full-bodied with medium carbonation. Well-balanced with slight lingering citrus rind and subtle sweetness.
Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer.

As the progenitor of its style, Arrogant Bastard Ale has reveled in its unprecedented and uncompromising celebration of intensity.
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
Tonnellerie Rue is a special variation of our rye saison that has been 100% fermented in oak barrels. Using this more traditional storage technique during the fermentation process adds further complexity to an already complex beer by allowing the natural yeast and bacteria, still nestled within the porous oak from previous fermentations, to eat away at the wort’s sugars while it slowly evolves into delicious beer.
Inspired by Frank Lloyd Wright’s grandiose vision for a mile-high skyscraper dubbed "The Illinois," we set out to brew an imperial IPA that would be similar in name and ambition. "The Illinois" Imperial IPA is dry-hopped with three of our favorite hops: Cascade, Meridian, and Citra. the result is a harmoniously hoppy ale with a flavor and aroma that is uniquely Goose Island.
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.
This unfiltered bottle of seizoen, with it's beeswax seal, is naturally refermented and carbonated with select yeast strains, producing fruity and spicy flavors that are balanced by hops and soft malt character.

8 Maids-a-Milking is brewed with lactose, which is commonly referred to as milk sugar. It’s the only type of sugar that is unfermentable by yeast, which adds more perceptible creaminess and sweetness to the finished beer. This mouthfeel and sweetness is complemented by robust layers of milk chocolate, subtle spice accents from our house Belgian yeast and roasty, cafe elements indicative of our take on the style
