This beer is the culmination of our recent series of 10% Imperial Black Wheats. For the first time, 3 Sheeps fermented their Imperial Black Wheat with Belgian yeast before the aging process. This adds some nice sweetness to balance out the bourbon notes. We then aged the beer in barrels for just enough time to allow the bourbon and oak character to accent the beer, rather than overpower it.
Aged for a full year in used bourbon barrels, this beer has flavors of dark fruits and wood. Sweet toffee up front, giving way to a bitter finish that lingers for quite a while on the back of your palate.
