Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but made entirely with now-rare Sorachi Ace hops grown by a single farm in Washington. We ferment it with our special Belgian ale strain, and then add more Sorachi Ace hops post-fermentation. After the dry-hopping, the beer emerges with a bright spicy lemongrass / lemon zest aroma backed by a wonderfully clean malt flavor.
Heady aromas of blueberry, pine, citrus and tropical fruit are the result of blending Mosaic hops with several other delicious American hop varieties. For being a large, hoppy beer it is quite drinkable, in part due to the balancing act of alcohol, malt complexity, and enormous American hop character.
Like fresh powder, it’s a seize-the-moment thing. This year we’ve chased down Lemondrop hops from the Yakima Valley in Washington. At harvest, we rush the hops from the vine to our kettles to ensure we capture the purest, juiciest essence of the hop flower in every beer. COLETTE is our homage to the saisons that Belgian farm workers have enjoyed for centuries. Brewed with barley, wheat and rice and fermented at high temperatures with a special blend of four different yeast strains, COLETTE is fruity and slightly tart, with a dry finish that makes it that rarest of treats — a beer as refreshing as it is complex.

Old Chub is a celebration of malts. The cola-colored beer features a dense, tawny head, a creamy mouthful and flavors of caramel, chocolate and lightly roasted malt. Complex and rich, it finishes with a whisper of smokiness that calls to mind a fine single malt scotch.

This NW style sour blond ale was barrel aged for 28 months before spending an additional two months on 300+ pounds of Black Cap raspberries: think Nouveau Boujoulais with blackberries. Vinous then sweet aromas of tart blackberries are the first to be noticed. Sharp, acidic notes of tart berries and leather on the palate lead to a sharp, dark berry presence and a finish with a prolonged dry fruit note.
Colour and sight: Dark brown-red. A compact white-yellow, stable and lacing head. Scent: Touches of caramel, mocha and chocolate. Spices such as liquorice and coriander are also present. Flavour: a very good mouthfeel of alcohol and softness. This is followed by an increasing bitterness, partially from the hop, but also from the roasted malt and chocolate malt. Towards the end a nice balance between bitterness, sour and sweet.
fresh, kettle soured, India Pale Ale with bright notes of grapefruit, agave, tangerine and passion fruit. Normally “sour” and “India Pale Ale” would be contradictory terms because the flavor combinations can be tough to bring together in just the right way.
Snörkel is brewed with oyster mushrooms from Logro Farms in Austin, Texas and alderwood smoked sea salt. It takes inspiration from traditional German gose, but sets out to explore the curiosities of umami. Unfiltered, unpasteurized, 100% bottle conditioned.
Forgotten Tales of the Last Gypsy Blender, Series 1 Volume 1 is an oak aged sour saison collaboration I brewed with Celina Tio, chef/owner of Julian and the Belfry in Kansas City, Missouri. We brewed it with mango and tamarind, and a touch of rye.
A medium-bodied, malt-accented dark brew, deep-sepia in color, with a chewy texture and a firm, creamy, long-lasting head. Despite its dark color, its a soft and elegant brew that is rich, mild, and surprisingly balanced.
