A more tropical approach to your “West Coast” style IPA; Maui Waui has proven to be one of our more popular beers! This single malt IPA is light in color and body; with a soft bitterness. The Mosaic and Citra hops give strong aromas and flavors of guava, pineapple, and mango.
In well-made examples of the style, the fruit is both distinctive and well-incorporated into the honey-sweet-acid-tannin-alcohol balance of the mead. Some of the best strong examples have the taste and aroma of an aged Calvados (apple brandy from northern France), while subtle, dry versions can taste similar to many fine white wines.
Our White Ale features the complex flavors of the classic witbier, including orange peel and coriander – all brewed with pure Icelandic water that delivers a cool smoothness that is flavorful and refreshingly drinkable.
Food Pairings: The crisp citrus and spice notes perfectly compliment seafood, poultry, vegetarian dishes, Asian food and spicy foods including Mexican, tapas, Indian and Thai.
A Belgian Quad by recipe, but aging it in spirits barrels garners its own category: Central Coast Quad. A beer formulated to sit on the sweeter and malty side so that we could utilize it for blending. Turbinado brown sugar from Mexico and Belgian candi sugar add wonderful molasses flavors. It has a full body and lush texture with barrel expression all over this beer: toasted oak, coconut, leather and cigar tobacco.
The base is German barley & wheat, with a touch of Belgian aromatic; accented with grassy hops and an array of spring botanicals (heather, chamomile, lavender, & dandelion). Like a fresh meadow in spring.
Cuivre is loosely brewed in the English-style Old Ale tradition using our house Belgian yeast strain and then blended using the solera method. A portion of each of our anniversary ales is saved in our barrels and blended in with the next year’s production, providing more complexity and depth of character that comes with age. Layered with complex flavors of dark fruit,vanilla, oak, and burnt sugar.
We brewed a stout (no, not Black Tuesday, this one is only 5% abv if you can believe it), but we then decided to throw it into oak barrels...and added our special blend of souring bacterias and yeasts. The result is a perfectly tart yet awesomely dark and roasty sour stout. Not a style you see too often - and in our opinion, not a style you see often enough.
A light-coloured, spicy single-bock wheat beer, for both beer lovers and the beer connoisseur. Extra long and cold storage in their monastery cellars makes this single-bock a really special beer with full body and a distinctively great mouthfeel. Prost!
