The beer is blended from more than 30 American wine barrels that lived in the cellar from six months to two and a half years. More than 5,000 pounds of sour cherries were sacrificed in the making of this delicious brew, about three pounds per gallon.
Collaboration with Hopleaf! We started by brewing a traditional German Berlinerweiss—which Napolean’s men called the Champagne of the North—then tweaked it with a homemade tea blend to impart a slight apricot hue and botanical aromatics.
An ale created from a blend of sherry barrel-aged and barrel fermented batches. Using both Saison and Brettanomyces yeasts adds a peppery and tart character to the malty backbone and delicate hop aroma.
Earth, crushed minerals, deep dark red cherry with rich dark fruits up front in the nose. The palate has moderate acid with a present red and black fruit palate that tends towards blackberry compote with moderate to full body and the earth returns on the finish.
This bold, imperial brown ale gets its body from a team of malts including Caramel malt for sweetness, flaked barley for dense foam, a bit of Chocolate malt for its deep color and Aromatic and Munich malts to add even more depth. German and Perle hops add a touch of bitterness to balance the malty sweetness. The addition of rich Sumatra coffee takes this perfectly balanced imperial brown ale to a decadent level.
Mosaic Promise showcases a single malt—Golden Promise—and a single hop—Mosaic. The traditional barley’s depth of flavor and the versatility of the hops’ bittering, flavor and aroma characteristics are the strong pillars that comprise the structure of this clean, rich, golden beer.
Brewed with an abundance of flaked oats, bitter and imported chocolates, and Sumatra and Kona coffee, this stout has an intense fresh-roasted java nose topped with a frothy, cinnamon-colored head that goes forever.
