After primary fermentation, the beer is aged in Wild Turkey® Bourbon barrels until it fully matures. The deep mahogany color is evocative of the opulence to follow. Dark luscious aromas of burnished oak mingle with candy sugar, bourbon and hearth-baked bread. The luxurious flavors redolent of honey and molasses are intertwined with the richness of dark chocolate and the ardent warmth of alcohol, underpinned with hints of coffee, vanilla and dark fruits. ABV from 11% to 13.5% in 2014.

After scaling up our GT Gose recipe to a higher gravity and increasing the additions of botanicals, we aged it for three months in third-use barrels that once housed our Bourbon Barrel Stout. The resulting beer is truly unique and complex: the deeply charred barrels impart a notable “bourbonesque” hue to its appearance, while hints of vanilla and oak give balance to the botanicals leading to a soft bourbon flavor up front and a juniper-like finish.
