Jim Beam's bonded bourbon follows the letter of the law: the Bottled in Bond Act of 1897. It's bottled at 100 proof, aged at least four years in a federally bonded warehouse and produced in a single distillery season at a single distillery. Bottled in bond is a label for an American-made distilled beverage that has been aged and bottled according to a set of legal regulations contained in the United States government's Standards of Identity for Distilled Spirits, as originally laid out in the Bottled-in-Bond Act of 1897. A reaction to widespread adulteration in American whiskey, the act made the federal government the guarantor of a spirit's authenticity, gave producers a tax incentive for participating, and helped ensure proper accounting and the eventual collection of the tax that was due. While the regulations apply to all spirits, in practice, most bonded spirits are whiskeys. AROMA: Oaky notes with a background of vanilla & caramel. PALATE: Oak spiciness, medium-bodied with a balance of flavor.

After aging, when the bourbon is dumped out of the barrel, some liquid stays trapped deep inside the wood. This is the “Devil’s Cut.” Jim Beam have developed a technique to extract it. Jim Beam use a proprietary process that extracts the rich bourbon trapped inside the barrel wood. When ready, they then blend this liquid with extra-aged bourbon & bottle it at 90 proof (45% vol.) for robust, premium bourbon with deep colour, aroma, and character.
