After aging, when the bourbon is dumped out of the barrel, some liquid stays trapped deep inside the wood. This is the “Devil’s Cut.” Jim Beam have developed a technique to extract it. Jim Beam use a proprietary process that extracts the rich bourbon trapped inside the barrel wood. When ready, they then blend this liquid with extra-aged bourbon & bottle it at 90 proof (45% vol.) for robust, premium bourbon with deep colour, aroma, and character. In the early 18th century, Jacob Beam, founder and first distiller, started producing whiskey – white whiskey. White whiskey is a raw, unfinished spirit. There are two kinds. The first is completely unaged which can also be referred to as "white dog" or "moonshine." The second is a more flavor driven white whiskey, such as Jim Beam Jacob's Ghost. This white whiskey sits in uncharred barrels for 1 year and is filtered before bottling. AROMA: Light vanilla with soft barrel-aged notes.
