Peticolas Brewing Company

How many people can trace their brewing roots back to their mom? Well, Michael Peticolas’s mom, Jacque Peticolas, started brewing a Mexican styled beer at her El Paso home in the mid-1990s. Poured from big brown 22 ounce bomber bottles, those copper colored light ales with a hint of apricot hit the spot, especially during the long hot Texas summers. That’s when we first experienced the satisfaction of drinking and sharing beer made at home that tasted better than the beer for sale down the street.

After practicing law for a decade, Michael Peticolas turned to his passion for craft beer. In 2010, he enrolled in the American Brewers Guild’s Intensive Brewing Science and Engineering program, wrote a business plan, and formed the Peticolas Brewing Company. The following year, he built a brewery and on December 30, 2011, Michael brewed his first batch of beer, an Imperial Red Ale called Velvet Hammer. During the first year of operations, Michael acted as the brewery’s sole brewer, cellarman, distributor, and brewery representative. Volunteers pitched in from day one and every brewery employee to date started as a volunteer having never worked at another brewery.

In its first year of operations, Peticolas Brewing Company won numerous local and national awards, including the biggest award in the brewing industry, a gold medal at the Great American Beer Festival (GABF). A GABF gold medal is an objective measure that a beer is a world class example of a particular style. Peticolas Brewing’s Royal Scandal, an English pale ale, won the award after less than 2 months in the market. During its third year of operations, Peticolas Brewing brought home another gold medal at the GABF. This time Great Scot!, a Scottish Ale, won gold in the aged beer category. In 2017, the brewery hauled in a silver medal from the GABF for It’s Always Something, a Belgian Strong Ale and in 2018, Peticolas Brewing was named the best brewery in America at the US Open Beer Championship. In 2013, Texas craft brewers elected Michael to the board of directors for the Texas Craft Brewers Guild. After serving for a year, the board elected Michael co-chair of the legislative committee, which seeks to expand the rights of Texas craft brewers via legislative measures. In an effort to further expand the rights of Texas craft brewers, Peticolas Brewing also sued the State of Texas in an effort to declare an anti-craft beer law unconstitutional. Litigation is ongoing, but a favorable judgment will be a victory for all Texas craft brewers. Peticolas’s legislative and judicial efforts, as well as its award winning beer, have established the brewery as a craft beer industry leader in Texas.

Our Koslch serves as the basis for ‘Come and Take It’, but the similarities between the two beers end there due to an aggressive use of cascade hops that completely change this beer’s character. Although we’ve added nearly a pound and half of Cascade per barrel to a Tettnang hopped beer, the execution and manner of the Cascade addition in a cohesive and seamless manner is what ‘Come and Take It’ is all about. Tettnang imparts spicy and earthy characteristics while also subtly contributing fruity, floral, citrus notes; whereas Cascade is primarily classified as a fruity floral hop with a hint of spice. Emphasizing Tettnang early and Cascade hops late results in huge fruity citrus notes that dominate both Come and Take It’s aroma and flavor. The more you drink it, the more you’ll enjoy it. Weighing in at 5% ABV, we trust you’ll find this one refreshing beer.

Brew-man Rich Franzen is a mad scientist when it comes to dosing our beer with new flavors. After adding pure ground vanilla to our Scottish ale, we were hit with an unexpected sensory experience the following day. While discussing its flavor characteristics amongst our crew, “cream soda,” “root beer” and “Dr. Pepper” were all identified. After two more weeks of flavor and name discussion, we could only agree on one thing – “Don’t Call it a Cola.” A very dark Scottish-style ale centered around malt flavors with distinct caramel notes.

This month’s event will feature the release of a new beer, Prime Minister, an English strong ale. Not many examples of the style are available, especially locally, which is why we chose to brew it. Consistent with our basic brewing philosophy, the mission for the Prime Minister is to provide north Texas with an exceptional example of the style, which may not be too familiar. Prime Minister appears dark orange with complex fruity esters contributing to the aroma. Its medium bodied with a malty/caramelly sweetness. Hop flavor is present and bitterness is light, but evident and balanced with the malt flavors present. Fruity-ester flavors add to the character of this rich, somewhat sweet and complex beer.

Smooth. That’s the overriding characteristic of this rye pale ale. Rye is clearly present in aroma and flavor, but not overly abundant. The hop flavor and aroma is balanced by the rye’s spiciness, which remains through the finish. Its color is a beautiful bright copper beneath a nice rocky white head. Rye is the special guest, but the backbone of Rye’t On is the traditional pale ale behind it.

Back in the day, Michael Peticolas' brother, Charlie, was a cop and COPS filmed a few of his arrests. The best of which involved a deadbeat considering resistance to his arrest. With baton drawn, Charlie demanded "Sit down or I'll SIT YOU DOWN!" Since the episode aired over 10 years ago, we've uttered the line a million times to one another and laughed every time. We're paying tribute to that line by using it to name our Imperial IPA. A big beer that will sit you down if you don't do it first. Ha. Call it “Sit Down” for short. As for the beer itself, the intent is to exhibit the fresh and bright character of the hops. We dry hopped it with over a pound of hops per barrel of beer. It’s gold in color and the floral ester aroma is high. The hop bitterness is high, but not at all harsh. The hop flavor is high, fresh, and lively. Yet with all of our beers, it’s all about balance and this one is no exception. The malt character is fairly high and provides a tremendously full mouthfeel. Finally, the alcohol in this beer is intentionally present (and delicious). When it comes to food pairing, IPA’s are best when paired with spice. Indian foods are often complex and focus on spices and herbs. As a consequence, the hop aromatics of the IPA can result in great harmony with spicy Indian dishes. Otherwise, find yourself some spicy Thai or jerk chicken.

TOO SOON is an IPA brewed with a ‘back to basics’ approach. Rather than formulate a recipe using the newest and trendiest methods, we used the traditional methods and techniques that are the foundation for some of our earlier beers (e.g., Velvet Hammer, Royal Scandal, Sit Down). Our typical base two row pale malt is accentuated with a minimal amount of light crystal malt and we turned to three of our most tried and true hops…Centennial, Cascade, and Amarillo. The brewhouse hop regimen for TOO SOON mirrors that of the earlier referenced beers and three are dry hopped in the same manner as well. Will this beer turn out as well as Hammer, Scandal, and Sit Down? Does the beer name answer the question?
