El Rancho Meridian Hill Brett IPA

Meridian Hill will be a single hop series utilizing Brettanomyces (Brett) yeasts in place of traditional brewer's yeast (Saccharomyces). Much like in sour beers, Brett fermentation change the way the hops express themselves, and can expose new flavors and aromas. The first batch uses Cashmere hops, which combine with the Brett strain to create a beer with tropical fruit notes-mainly guava, an assertive funky character, and an underlying, pleasant bitterness.
