this beer utilizes a yeast that is quite different from the strains of brewer's yeast we typically use. Brettanomyces yeasts are more robust than brewer's yeast, and are able to utilize more types of sugars and more molecular precursors than their more domesticated cousins. This beer is bright and tart, with notes of pineapple and other unnamed tropical fruit. The finish is dry, and provides a pleasant dose of the 'funk' associated with this type of yeast. 4 hop varieties support with their contributions of fruity, earthy, and piney flavors.

While typically known for providing the 'funk' flavor and aroma associated with certain wild beers, when Brettanomyces ferments beer by itself and is not given time to age, it produces flavors of stone fruit such as apricots and peaches. This ale is further hopped with Kohatu, Hull Melon, El Dorado, Mosaic, and Citra hops. (ETA 7/20-7/22)

About 30 years ago, our brewer's dad planted two varieties of hops in his yard as a decorative plant. It turns out those hops still grow on the property and now get used by Bard for brewing purposes! Wet/Fresh hop ales utilize freshly picked hops within a matter of days and as a result are only available once a year during harvest season. As a result, these beers have a grassy, fresh floral quality. The hops in this particular beer also lend notes of stone fruit, pepper, and ginger. Cheers!

This "beer" is a true example of experimentation here at El Rancho. It is the combination of 3 fermented beverages in one - beer, mead, and cider. By weight it is 50% malted barley, 25% honey, and 25% Honeycrisp apple juice. The first fermentation uses an ale yeast to feed on the honey and malt-derived sugars. Then the apple juice is added and fermented a second time with champagne yeast.

The demand for hops increases each year as more breweries open up (currently there are over 4.000 in the U.S.) and while the acreage of hops has also increased, there is still a shortfall between supply and demand. As a result, we were not able to source the hops typically used in our I(70)PA which meant our brewer had to come up with a Plan B. This recipe features a single hop -a new variety to the market- called Denali which brings loads of juicy pineapple flavors an aromas supported by mango and papaya. We hope you enjoy it as much as we do!

The brewer wanted to see if he could craft a 'German IPA' (a non-style) by strictly using malt, hops and yeast of German origin. (1/2 BBL) The winners of our first Brewing Experience package, offered during a fundraiser, came out to the brew house on a fine Saturday, and helped our experimental brewer craft a fine beer. Based on their requests, we made a Belgian Saison base beer, to which we added freshly ground coriander, and hopped it with Citra and Mosaic hops. The resulting beer combines flavors of delicate Belgian spice, fresh citrus and zest from the coriander, and tropical fruity flavors from the hops. (ETA: 5/30-6/3)

This beer started as an amber ale fermented with raspberries and blackberries. Next It was transferred to a red wine barrel where additional raspberries and blackberries were added and allowed to continue fermenting and aging over the next 9 months. Strong notes of berry, especially strawberry, are complemented by a subtle tart, vinous quality which is rounded out by the oak quality of the barrel. Proof that good things come to that which waits!

We brewed our delicious witbier recipe, this time utilizing 4 lbs of strawberries-2lbs on the warm side of brewing, 2 lbs on the cold side. (1/2 BBL) The winners of our first Brewing Experience package, offered during a fundraiser, came out to the brew house on a fine Saturday, and helped our experimental brewer craft a fine beer. Based on their requests, we made a Belgian Saison base beer, to which we added freshly ground coriander, and hopped it with Citra and Mosaic hops. The resulting beer combines flavors of delicate Belgian spice, fresh citrus and zest from the coriander, and tropical fruity flavors from the hops. (ETA: 5/30-6/3)

This amber ale is was brewed with copious amounts of Munich, Vienna, and caramel malts to provide a solid malty, sweet, bread-like backbone. After fermentation was complete we added raspberry and blackberry purees and aged for a few weeks so the flavors could thoroughly infuse. The result is a super smooth beer complemented by flavors of sweet berry preserves.

This beer is a collaboration with Shine Restaurant & Brewery (Boulder, CO) and created for Collaboration Fest on March 25th. We decided to create a "super red ale" from the combination of our red recipes and then take it up another notch by aging it on 44lbs of French oak chips. The result is a luscious deep-hued red ale with a solid caramel malt backbone. From here the French oak provides layers of wood, vanilla, and cinnamon spice.
