We utilized a wild strain of brewer's yeast for this ale to showcase the diversity of flavors attributable to the microbes that ferment beer for us. The yeast, strain unknown, provides delicate, tart notes of plum and cherries, while also providing a lightl citrusy undertone. Heavily dry hopped with New Zealand Southern Cross and Wakatu hops to further include earthy, dark fruit notes.
