We brewed our Noble Saison and fermented, soured, and aged it for 5 months in a Chardonnay barrel. We then added ten pounds of blackberries sourced from a local farmer's market in the last month to give it a little extra twist. The blackberries really come through in the aroma, and the flavor gives way to a chardonnay-like finish that really highlights the qualities of the barrel it was aged in.
