The fine folks at Old Bakery Beer were gracious enough to brew a house beer for us. The Observer (named after Elijah P. Lovejoy's Alton-based abolitionist newspaper) is an American Amber Ale generously dry-hopped with Simcoe, Chinook, and Cascade hops. It's lightly malty and nutty with a pungent bouquet of pine and citrus aroma. The Observer pairs really well with our Classic pub burger.

This cocktail’s creation is ascribed to Erskine Gwynne, an American-born writer who founded a monthly magazine in Paris called Boulevardier, which appeared from 1927 to 1932. The boulevardier is similar to a Negroni, sharing two of its three ingredients; it has been described as “the Negroni’s long-lost autumnal cousin.” It is differentiated by its use of bourbon whiskey or rye whiskey as its principal component instead of gin. A simple substitution? Hardly. The bittersweet interplay between Campari and vermouth remains, but the whiskey changes the storyline. Where the Negroni is crisp and lean, the Boulevardier is rich and intriguing. There's a small difference in the preparation, but the result is absolutely stunning. It is served on the rocks.

From there anything can (and does) happen; e.g. a trip through the blender, an extra fruit, etc. The 'real' Daiquiri, however, is an extremely simple rum cocktail, and the three ingredients should find a balance in the glass. The Jack Rose is the classic cocktail that never got invited to the oldies reunion. While other sours, such as the Daiquiri, the Sidecar, and select others are revered and reinterpreted in their dotage, this mainstay of the 1920s and ’30s has fallen so far out of circulation that few still know its name. More’s the pity, for when properly made, it is one of the canon’s stronger pillars and a perfect sip when the post-equinox winds set in. The drink is simply a sour made from apple brandy — or applejack, as it was known from Colonial times through Prohibition — with grenadine syrup as the sweetener. Its name is attributed to any number of colorful characters, including a famous gangster stool pigeon, but it most likely comes from the shortening of applejack and the dusty rose color the drink attains from the grenadine and citrus. It is served chilled and straight up.

In 1838, Antoine Amedie Peychaud, owner of a New Orleans apothecary, treated his friends to brandy toddies of his own recipe, including his "Peychaud's Bitters," made from a secret family recipe. The toddies were made using a double-ended egg cup as a measuring cup or jigger, then known as a "coquetier" (pronounced "ko-k-tay"), from which the word "cocktail" was derived. Thus, the world's first cocktail was born! By 1850, the Sazerac Cocktail, made with Sazerac French brandy and Peychaud's Bitters, was immensely popular and became the first "branded" cocktail. In 1873, the recipe for the Sazerac Cocktail was altered to replace the French brandy with American Rye whiskey, and a dash of absinthe was added. It is served on the rocks.

The Sidecar is often singled out as the only good cocktail to come out of the long national nightmare that was Prohibition. And when you're sipping one, you almost think it was all worth it. The luminous, golden-straw color, the perfectly controlled sweetness, the jazzy high notes of the citrus against the steady bass of the brandy. This is a drink whose suavité is beyond question—it's the Warren Beatty of modern mixology. It's so easy, in fact, to be seduced by this clever old roué that a word of caution would not be out of place here. These gents have a way of stealing up on you and—bimmo! Next thing you know it's 8:43 on Monday morning and you're sitting in the backseat of a taxi idling in front of your place of employ. In your skivvies. While unanimity prevails as to what goes into a Sidecar, there's considerable dissension about the proportions. The so-called French school holds to a Trinitarian philosophy—three equal parts. We like more of the Holy Ghost in ours. It is served chilled and straight up.
