HUMULUS TERREUX humulus_terreux Humulus Terreux is the type of beer that gets our stomachs tied up in knots of excitement. It’s a chance for us to experiment with both hops and yeast, creating unique, juicy & funky flavors with just these seemingly simple, earthen ingredients. Each batch of Humulus Terreux will use a different hop varietal and one of the several strains of Brettanomyces yeasts that we have incubating in our laboratory to create a one of a kind, wildly traditional bière™. The flavor possibilities are endless when combining possible hop notes of citrus, pine, flowers or grass with the barnyard funk, earth and tropics that can come from a 100% Brettanomyces fermentation. While each beer will showcase a different, distinct character, the overall result will always be dry, funky and delightfully hoppy. FOOD PAIRING Each batch of Humulus Terreux will taste a bit different, but given its basic nature, it should always be great with a home grown salad and simply grilled proteins of all sorts.

5 Golden Rings is the 5th verse in our ' 12 Days of Christmas' winter seasonal ale series. The only golden ale in the bunch, we spiced up the natural pause in the classic song with cinnamon, allspice and ginger along with the delicious sweet and tangy flavor of pineapple. The resulting ale is a true holiday treat that can be enjoyed fresh or cellared until 2019, when 12 Dummers Drumming will be released.

The newest installation of our Anniversary beer -- Bois -- available on draft and in bottles. The name Bois is French for wood, the traditional fifth anniversary gift. That brew is loosely brewed in the English-style old ale tradition using our house belgian yeast strain and blended using the solera method. Notes of dark caramel, dates, coconut, burnt wood, dried apricot and vanilla round out that robustly complex ale

Saison Rue is an unfiltered, bottle conditioned, Belgian/French-style farmhouse ale. This is a beer of subtlety and complexity, with malted rye, spicy, fruity yeast notes, biscuit-like malt backbone and a slight citrus hop character. With age, this beer will dry out and will become more complex with rustic notes of leather and earth from the contribution of a wild yeast strain.

Gypsy Tart is a Flanders-style brown ale with a California touch. A beer that can trace it's origins to Great Britain, but more famously perfected in western Belgium, has been updated through our own modern techniques, delivering the sweet body and mildly tart finish that has won over numerous generations of beer drinkers in Europe. Our rendition of this wonderful beer style is perfect for both sour beer amateurs and advocates alike.
Berliner Weisse3.1% ABV

This tart, German-style Berliner Weisse is as authentic as it gets. Using lactobacillus and a hint of brettanomyces sours this unusual, low gravity wheat beer.
American Amber Ale6.9% ABV53 IBU
The BrueryPlacentia, CA
This hoppy red ale utilizes citrus and floral notes of the Centennial hop to balance the light and caramel sweetness of the malt. 2 batches, one left to mature on American Oak and another freshly dry hopped, are blended to create this intricate yet unassuming red.
Blonde Ale7.2% ABV5 IBU
The BrueryPlacentia, CA
Our take on the traditionally non-alcoholic drink is a blonde ale brewed with a heavy dosing of rice, cinnamon and fresh vanilla beans along with lactose for a little extra creamy character.
Belgian Dark Strong Ale10.6% ABV
The BrueryPlacentia, CA
Monastic breweries wrote the book on complex ales that weave notes of dark fruits, spices, caramelized character and warmth into each sip. The Order summons that tradition and adds local inspiration. Our darkening, Belgian-inspired abbey ale features dark-fruited character from dates, Belgian-style sugars and subtle spicing from coriander, which compliments the Belgian yeast esters.

Meaning “rye bread” in Danish, we took our inspiration for this beer from the Danes’ staple dark, whole grain rye bread. Brewed with three types of rye malt, this robust brown ale showcases the earthy, spicy character of the grain, complemented by bready, nutty barley malts and a hint of roast. Loosely based on the Scandinavian Christmas beer or “Julebryg” tradition, this beer is perfect for the colder weather of winter. And don’t worry about the name, we can’t pronounce it either!
Weizenbock8.7% ABV20 IBU
The BrueryPlacentia, CA
Shegöat is based on one of Patrick’s original, multiple award winning homebrew recipes. Based primarily on the traditional weizenbock style of Germany, brewed with both malted barley and wheat, the beer is rich in the flavors of bananas, cloves and caramel with a notes of cake spice hovering in the background. Just like the banana bread that großmutter used to make.
