We used all English hops to create an assertive fruity, earthy hop profile.

Named after the mighty river that flows through our backyard, this brown ale is more mellow (and less turbid!) than the name might suggest. We crafted this beer to be flavorful and easy drinking. It has a light body and low alcohol content, with notes of nuts and toffee, and hints of earthy hops.

The first recipe from our new brewer Jeff is fittingly named after Thomas Royston whose 50 acre tract eventually became downtown Fredericksburg. A light sweetness of brown sugar, maple and pineapple up front with moderate bitterness followed by the herb and pine from the hops through the end of the taste. A dry finish with hints of spice. 80 lbs of Georgia Candy Roaster squash, grown by Snead’s Farm, was added to this Dark English Mild ale. Chef Justin Cunningham roasted the squash with a touch of cinnamon, nutmeg, and honey, and we added the puree to our mash. The squash gives this mild malty beer a touch of sweetness that underlies roasted, nutty, and caramel malts. The spices peek through in the finish, leaving you with some lovely reminders that Autumn is upon us.

In the spirit of the Craft Brewing Community, we partnered with two local homebrew clubs, the Fredericksburg Brewing Insiders, and the Stafford Brewers Club to create this recipe. We took a traditional Wit recipe and turned it on its head, utilizing rye for added spiciness and a new hop variety, Azacca, to bring out complimentary tropical flavors. Orange Zest and Coriander contribute bright citrus, while the hops bring notes of pineapple, melon, and tart lemon.

Our scotch ale was brewed using traditional methods and slightly non-traditional ingredients. By boiling our wort for twice the usual length we created highly caramelized sugars, which give the beer a deep, rich malt backbone, underscored by a mild alcohol warmth. Applewood-smoked malt lends a subtle, savory smokiness that adds complexity without the usual peaty smokiness.
